Led by farmer Luiz Paulo and his partners, this project is poised to redefine coffee industry standards. Here, amidst the cultivation of traditional Brazilian varieties like Yellow Bourbon, the farm explores over 30 exotic coffees employing avant-garde techniques, including shaded fields.
Each variety undergoes close monitoring to harness the region's optimal climate conditions. Luiz Paulo himself oversees the harvest of initial test batches, ensuring unparalleled quality. The farm's notable achievements at the Cup of Excellence underscore their unwavering commitment to excellence.
Yirgacheffe, a renowned Ethiopian heirloom variety, is showcased in a new context here, cultivated in Brazil. This heirloom lot undergoes processing after harvesting at Santuario Sul, utilising a 92-hour Anaerobic Natural process. This method entails fermenting the coffee fruit in an oxygen-tight tank for nearly four days before sun-drying. Fermentation in a closed container allows for greater control over the process, resulting in a clean complex cup profile.
