The natural processing method employed here involves sun-drying whole coffee cherries on raised beds. This slow, meticulous process allows the beans to absorb sugars from the fruit, imparting a rich, fruity character to the coffee. While Gesha coffee originated in Ethiopia's Gori Gesha forest, it gained fame in Panama. This project brings this prized variety back to its ancestral home, marrying traditional Ethiopian coffee heritage with modern cultivation techniques.
